Aunt Sarah's Peach Long Cake

Since this is July and peach season, I want to share a family recipe with you! This recipe has been in my family for four generations now, and there isn’t a summer that goes by that it hasn’t been made at least once, usually much more!

I have memories of many summers growing up that would include spending the night at my Grammy’s house and eating Peach Long Cake while we watched the Miss America pageant... all while she would give me a home perm!

I hope you love this recipe as much as our family has for years!

 

Aunt Sarah’s Peach Long Cake

Sprinkle ½ cup of sugar over 3 ½ - 4 cups of sliced, fresh peaches. Let stand at room temperature.

Mix together:
      2 cups flour
      4 tsp. baking powder
      6 Tbsp. sugar
      ¾ tsp. salt
      Cut in 1/3 cup shortening with two knives.

In a separate bowl, combine:
      1 large beaten egg
      2/3 cup milk

Stir into flour mixture and blend well.

Spread dough into a well-greased 8 ½” x 11” pan.

Spread the sweetened fruit over the top of the dough.

Sprinkle 1 tsp. cinnamon over the fruit.

Cream together:
      ½ cup softened butter
      ½ cup sugar
      6 Tbsp. flour

Drizzle over the fruit.

Bake 40-45 minutes in a moderately hot oven (350-400).

Serve with milk or vanilla ice cream.

Serves 8.
